I noticed on my 2015 if you unlock it with the remote and don't touch it it will auto lock but if you open and close a door it will remain unlocked.

You might want to test that theory. First I think it depends on if you have the keyless entry or the fob with the buttons you have to push to get locks to operate.
Some cars will lock after a certain time if a door is opened or car is put in gear. So if (for example) you get in your car and start it. Then you open the door, get out, and close it - to say scrape the windshield or something - you could be locked out with the car running. This happened to a friend in a rental car. Took 3 hours for the rental folks to show up and unlock it for him.

I thought to change this option you needed to use a programer. That means going to the dealer. If that is the case, shop around. One dealer wanted $80 to set my windows to roll up/down with the remote. They claimed they needed to charge 1/2hr of labor ..... !#@$!#$!@#$

Auto lock
I don't know why this happens but I've noticed that if I'm in the car when it's not running with the keys and the doors closed, the car will automatically lock all the doors. It happens when I'm sleeping in the car overnight on camping trips. I can click open the locks as I climb in but it will lock them again in a short while. Be careful if you leave your keys inside. You could get locked out. And if you loose your keys while you're inside, good luck getting out (maybe).

My 12' Limited sounds an alarm if I try to lock the doors with the FOB left in the truck. Never experienced the doors locking on their own unless the Trans is put in drive. Toyota must have changed the programing.

3 options:
Re-read the manual and play with the setup (I can't recall exactly, but it involves turning the ignition to 'on' and cycling the lock button x amount of times. It will work. I've done it. You may have to do it more than once because it is a pretty specific routine that is easy to screw up.
Go to dealer and have them disable it via Techstream
Utilize a third party source (like Carista) to reprogram it
