, Im in Calgary too, with a 2020 Pro and 286/65/18 tires.
Eibach is working on a straight coil lift for the Fox suspension which is one of the best options for keeping your stock suspension, or do a simple cornfed spacer lift. I have the Eibach 1" rear coils on order along with a 2" cornfed spacer until Eibach releases the front coil.
With my tires (and new wheels) I only rub slightly at full lock on the mud flap, which I should be able to push in with a heat gun. (As the Pro comes with the front fender pushed)
Lots of good options for tires, I went with Cooper Discoverer AT3 XLT, and have a buddy with the 4S who is happy with them. They had been on sale at Cdn Tire for 20% off. Other than that, the Falkens, Duratracs or K02s seem like good bets.
