was your subaru an open deck head? if so, they seem go to through headgaskets fairly quickly. how do i know? i have an 02 WRX apart in our shop right now.
i have seen a lot of folks use a feeler gauge and a straight edge. you should be able to do the heads off the car no issue and the block in the car without issue.

Dont' know what kind of heads my 99 Subaru had. All I know is those boxer engines were notorious for blowing head gaskets.
And in response to the others who commented on my question, I would agree if the engine was overheated, the chance of warping is fairly high. If the engine wasn't overheated, than why would you assume your heads or block are most likely going to need resurfacing? And yeah, definitely check the head and block surfaces to be sure, but I just didn't understand the comment that it's almost a certainty that you're going to need to do some resurfacing as part of a head gasket job.
