One of the lighter 34" MT (well 295/70/17) I've seen is the Cooper Evolution MT weighing about 59lbs. They're only 2 ply sidewall though so I'm guess that's where they shed some weight.

I'm still riding on 285/70/17's and with all the weight I have I won't go with a bigger tire until I re-gear. She's right at the tipping point where it's still tolerable but I don't think it would drive well at all with a bigger tire.
I looked at the Evolution and the Cooper AT3 LTX is another relatively light AT that is worth considering too. My St Maxx's are very heavy but the off road performance and durability is worth it to me.
As far as the jump to 34's goes it frankly doesn't add much. At best you are gaining a 1/2" ish clearance, probably less when airing down.
And as you said it just an appearance/cool factor thing to most. Not rubbing seems to be judged by coming off a curb or hitting a pothole.
