To be honest I don't remember the rear bumper install as it was about 2 years ago. I don't think it took very long or was that hard. Like with any other heavy bumper having a few extra hands to help hold it up makes a big difference.

You will feel a 2" lift on the Subaru. It is not bad, but it won't be flat in corners anymore. To be precise, the top of the vehicle will feel like rolling while the bottom remains planted. It is still better than a stock 4R in corners, lol, but worse than my 4R is now. LT tires help with cornering on a lifted Subaru. I had LTD KO2s and SL Yokohamas on my OB and there was a big difference in cornering once I lifted it 2". I had 1" total lift for years and then 2.5" total lift.
The 2" lift will help, especially in sand, but the real issue is by far the front bumper.
