Looks like the bed itself is about 38 cubic feet. Does a canopy that does not stick above the cab roughly double that number?

I assuming you're referring to a truck bed topper/camper shell, I would say a little less than the bed mostly because the toppers are usually tapered from the bed up to the top to follow the taper the cab of the truck, while the bed is more or less square, also not sure it the height would be the same, you need to measure from the bottom of the bed to the top of the sides and compare that to the measurements from the sides of the bed to the top of the cab, all of this has to be put into the equation and then do the math.
