Are your brake components greased? (Adjuster threads, backs of shoes where they meet the backing plate, etc)
Make sure there isn’t oil on the face of the shoes or in the drum.
Maybe there is an issue with one of the brake cylinders/lines.

The hotter side is the one that's sticking. If they're the same temp left to right then it's not sticking as bad as I think or there's no problem with it. You can only compare the front left to front right or rear left to rear right. Different braking setups and bias heat up differently.

You have two temp gauges already. They are attached to your forearms on both sides of your body. Just put your hand on your wheels after you drive around for a while, if one is sticking it will be hotter than the others. If they are all the same than you have a temporary sticking issue in that it sticks and unlocks quick enough not to build up a temperature difference. If you know it is the rear brakes than just replace the shoes, caliper and check all the emergency brake functions carefully. Just an FYI never expect mechanics to solve all your problems, they are only concentrating on what they are being paid to fix. Even the most talented mechanic is only as good as the time he has available

Okay understood. Though I feel like it is both sides, when it locks the truck doesn't want to turn or veer. Unless one drum locking up could still hold her back?

I will try to do this test this weekend and will report back.

Haha okay yeah I will try to figure that out this weekend and will also look at ordering new shoes and drums. You said caliper... did you mean drums or the piston?

find a gravel lot, stop hard so the tires slide. then verify what tires are locking up.

Piston is probably correct for the rear. They are inexpensive and not difficult to replace
