You will have to lock the union line fitting with sensor down with a wrench somehow or vise grips, the crush washer(s) are joined together with a little strap if I recall correctly(I could be mixing it up with a 2nd gen Taco) and appeared to be SS, (EDIT: I was wrong they are copper crush washers #90430-16242,. For the 5vz-Fe) and must be fused to the banjo bolt and fitting, you just need to break that bond. You could probably get away with thin 0.5mm SS, copper or aluminum crush washers but I would either reuse the old ones or buy new OEM, they are very thin crush washers. Not related but It's usually the rack fittings that are a bugger, and if you have new lines and even better a new rack I cut them at the fitting and use a socket to break them free if reusing the rack.
