Since I'm replacing the lower ball joints and removing the upper control arms up front, should I take the time to pop off the axle nut and take the whole steering knuckle in to a shop/dealer and have new wheel bearings pressed in?
How much should I expect to pay?
I've got 160k miles on them...

Prices vary a lot by region and city vs rural.
But if it were me, since you’ve got the upper arms off, I’d do the bearings and consider welding on some spindle gussets and strut tower reinforcements while everything’s torn apart.
