That is definitely possible. If the vacuum leak is through the booster, it would explain both symptoms.

as for stereos, most work as you can pretty easily install a single din or double with the right harnesses and such. I put a $60 double in mine with relative ease in about an hour. i imagine most other stereos would be similar

I imagine this is the key and since I don't have any tools, I don't think I can undertake this. I tried to look for a really simple childlike easy to follow tutorial on Youtube, but couldn't find one unfortunately.

Crutchfield will sell you a headunit and wiring harness adapter and give you installation instructions. All you need as far as tools in a screwdriver and some trim removal tools, though a taped up flat head screwdriver can work in a pinch if you don't have trim removal tools.
