Need HELP...engine troubles.

I posted on here about a month ago that I thought my heater core was going bad. When I got to looking around, my coolant resevoir was low, so I refilled it and the heater has been fine ever since. But, I got really nervous as to where my coolant was going. I changed my oil on Sunday, while the oil was pretty hot. I poured aobut a liter of the oil into a clear gatorade bottle. After the used oil had cooled down, I could see liquid had settled down into the bottom ring of the gatorade bottle. I am assuming this coolant? Is there anything that would let this happen besides a bad head gasket? I called my mechanic and he quoted me @ $1200 to replace the head gaskets. How bad is this job to do on your own.

What color was the liquid? Normally a problem is indicated by an off-white to light-brown colored milkshake looking stuff.

Yes, the liquid that has settled about the bottom is a clear white looking substance.
