Been averaging 11.6 mpg with the winter gas while enjoying the V8, if you know what I'm saying.
She's young by some standards, but still killing it:

Daydreaming of fitting 37s. Why must I search Craigslist? Too much temptation for me! If you guys egg me on I might buy these... they are 4hrs away though and I would still need to pick up a spare.

Took my bumper off for the final measurements. Threw on the lightbar for giggles. 30" ebay for $70.
Someone should do a satoshi with an integrated light bar inside.
Also, helping to install OME 60071L "long travel" shocks from a land cruiser onto my brother's FJ. Flexing pics to come.

OME 60071L, Icon 2" springs, extended brake lines, 34" tires, sway bar on.
The ride is firmer with the new shocks vs his old Icon 2" diameter. But not too bad.

Some measurements for future reference:
I timed my 0-60 using the GPS in my phone with an app.
When my truck was only leveled in the front (05' V8), stock tires, full tank of gas, AC off, level ground, not much wind that I remember. 7.6s
Just timed it with my current setup. 285's, 3" lift + 1.5" BL, 200lbs of skidplates/sliders.
3 gallons of fuel left in tank, AC off. 8.05s
So I lost maybe half a second with all things being even. The vvti V8 doesn't care.
Also, I thought my coilovers were cranked pretty high in the front, but never measured the amount of downtravel I still had left. I have the 3" lift springs in the rear, and it still looks like I have the stock rake, so I'm guessing I have around 3" of lift in the front too. I measured the driver's side coilover and it had 1.31" of droop left at the shock from ride height. That's probably around 2.6" of wheel droop right? Not that it really matters, playing in the rocks the more lift the better, but ride quality I'm sure suffers a bit.
Just some observations. I know I've been trolling you guys for a while now with my bumper; I'll get back to work!

You can't post 0-60 times without elevation! haha
Props to taking the time to record these stats. And yes... get back to work so we can see your bumper.
