The 2003 V8 has the newer 5 speed transmission and yes it does have a dipstick but it's not the sealed version of the 5 speed and I'm pretty sure using a different fluid than the sealed versions, 2004 and onward V8s and 2005 and onwards V6s have the sealed 5 speed transmission,

so yes you can check your fluid level using the dipstick, you only have a drain plug on your trans pan, all the sealed 5 speeds have a drain plug and a fluid level plug on the bottom of the pan, I would much rather have a dipstick because it's sorta a pain to check the fluid level on the sealed transmission.
