I know a few people are running this setup on 4th gens, but haven't seen anything about tire sizes. Those that are running it, what sort of tires are you all using? Curious as I'm seeing lots of conflicting info as to how much lift their 2.75/1 kit actually gives.

Your choice of a suspension brand wouldn't affect the choice of the tire size. People that are lifter with Dobinsons can run the same tire as people with OME, bilstein, etc. If that is what you are asking.
In terms of what size -- there is a philosophy that lift doesnt change the tire size but no one like to hear that lol so I amma quote the 1st post of the suspension FAQ
Front/Rear Lift Tire Size
Stock -
265/65R17
265/70R17* (except BFG A/T)
1/0
265/70R17* (31.6x10.4)
255/75R17 (32 x 10)
2/1
265/70R17
255/75R17
3/2
275/70R17 (32.2 x 10.8)
285/70R17† (32.6 x 11.2)
255/80R17* (33 x 10)
3/2 + 1-1.5" Body Lift
255/85R17† (34 x 10)
285/70R17†
305/65R17† (32.6 x 12)
I guess you can assume you would get at least 2.5" so you can go with 255/75r17 or 275/70r17 safely (or whatever is their equivalent for 18" rim).
If you are going bigger/wider than I have noticed that its very YMMV. Most people need BMC for 285+
