The mechanic who helped me do the job is 800 miles away lol. I did the job while I was in Florida so if anything was disturbed while doing the job I'll have to hunt down solo.

Could you video it? It doesn't sound 'normal', but it could be any one of a dozen or more things. It doesn't make me think head gasket straight away though.
No all mine does is rev slightly high as it warms up, and the RPM aren't perfectly stable, but it doesn't sound like it's going to stall.
I forgot to say - the easiest thing you might be able to do if you want to rule out HG is take the spark plugs out and look for coolant contamination. It's a relatively long job to remove the intake, but it isn't too difficult. That way you can double check all your vacuum and intake components. But I would confirm it is still using/losing coolant first before dismantling anything.
