I reinstalled everything and went with ZEREX RED instead of the Toyota pink. I filled the coolant and burped the system, now with the car at idle is at 185*F and about 186.6 to 190.4 while running with A/C or without A/C at an ambient temp of about 92*; I get my readings through my torque app pro. I remember before the repairs the car was running at 175*F to 180* with or without the A/C on. Is it possible that the cooling system still has air pockets? I'm looking too much into this? Or am I just causing my self to be paranoid with the coolant temps? Any help or feed back is appreciated

I have an 04 V6 as well. My temp are usually at 182-190 for normal city driving. I will get 193-195 at highway speeds or hard pulls.
175-180 seems low since the thermostat opens at 182 I believe.
I think you should be fine.
