I can’t figure out the offset difference plus the lift difference vs stock and what that will do for the rubbing. I’m just trying to get the best biggest tire combo for the lift I have with nicer wheels

You should have very minimal rubbing with that setup. I currently have 265/70-17s on stock wheels and occasionally have very slight rubbing on the front passenger fender liner.
The biggest you can safely go with your setup is 275/70-17 if you hardcore off road often, or 285-70-17 if you don't hardcore off road often. Both setups will require you to move the fender liners slightly forward to avoid rubbing, which is easy. With the 285 tire you might need to chop the body mount if you do hardcore off-roading.
I'll be installing 17x8, 0 offset wheels, with 285/70-17 tires. I found that wheels that are 8.5" wide or less with 0 offset and 285/70-17 tires is the biggest you can go while having the best chance to not chop the body mount. Wheels that are negative offset tend to cause more rubbing.
