The Bilstein 5100 rear shocks are not adjustable, only the fronts are. It should match the front pretty well. Only issue is that without a lift, if you're off road an flexing all the way it's possible the coil could come unseated.
TT does not equal TRD. The TT shocks are silver/blue and are "trail tuned". The TRD's are red/blue and are tuned for the higher speed stuff based on what I've read. Both are Bilstein shocks made for Toyota. I honestly can't say if there's a noticeable difference, it very likely could all be a marketing ploy.
No problems with running just the coils and no spacers, it's all about the look you want. With just the coils it would bring the front up some and level things out. If you really wanted it level you could add the 1/4" thick Toytec spacers up front, this is what most have done. I can't recall anyone who hasn't added at least the 1/4" front spacers. Check the FJ swap spread sheet (link in my sig) and you can see who has what and possibly some pics.
