Sounds like the issue is probably with the head unit unfortunately.
What you can try for some more testing is entering "Diagnostic Mode"
While pressing and holding the "INFO" switch, operate the light control switch: off → turn on → Turn off → turn on → turn off → turn on → turn off.
There's some sub menus and such for testing the touch screen and stuff, you can exit the mode by simply cycling the ignition. You may also want to try pulling the radio fuse for an hour or two and then reinstalling; that should drain the memory and default the unit to factory specs. If that doesn't work I'd see if you can find a shop that rebuilds headunits and/or think about going aftermarket as it's probably an issue with the touchscreen portion itself.
