I use Onx and I really like it. Pretty extensive list of trails and it's been extremely helpful exploring areas that I've never been to before as well as finding dispersed campsites that I never knew about. You can add waypoints, download 5-150mi wide offline maps, search trails by vehicle accessibility, and grab GPS coords/elevation for any location. If you like going to SUPER remote areas, though, it may not have any trails marked for that area. The only thing I wish you could do is map out a complete route like Google Maps.
No experience with any other app like Gaia so I can't comment on how it compares to anything else.
I mean, look at all the trails it has marked for this particular area in CA. Every little tiny green line is a mapped trail:
