Question - did they rub before adding the wheel spacers?
Also can you post some pics of how they looked small in the wheel well?
I'm really considering the Nitto Ridge Grappler LT255/80R17 33.31 inch size tire for the weight savings (54.96lbs) over the Nitto RG 285/295 (64.4 lbs / 65.08lbs).

If you aren't stuck on Nitto Ridge Grapplers, go with some BFG KO2's (Load Range C) in 285 and save weight from any of the RG's you just listed. They come in at 51 lbs.

I've got ZERO rub on my body mount with trail/offroad wheels and 255/80s (wildpeaks). Ever so slight rubbing on the drivers mudflap on weird flex when making a left turn, but it's minor at best - removal would solve the issue.
I don't have spacers on yet - I put them on and was rubbing the front fender liner and mudflap decent, pulled back in the garage since it was 10PM pulled them off and they've been in a box ever since...
Also - gas mileage is great on the 255's - I average 20-21 on my commute to and from the office - running 65-75 (70 miles round trip)

The only rubbed at full bump before the spacers.
I don't have access to many pics on the computer i'm on at the moment. Check my IG bigdaddyadventures
I know a lot of people are happy with their RG.

TRD Hulk has me convinced to go 285/75 R70s for my next upgrade. That's a badass Runner! I remember reading somewhere that taller sidwalls is better for offroading, but I don't always trust the internet, lol.
