Glad to know someone else has already done this. I have no idea if there are any risks of sleeping in the same enclosed area as the fridge. Will be below 35f where we're headed so limited options to crack a lot of windows.

You might want to practice moving your fridge into the front and do a fit check, it can get heavy when filled with food and drinks (I’m using cans now, bottles are too heavy!). I move the passenger seat way back, put down a towel and maybe a piece of cardboard to sit it on. Most fridges are pretty big, you need to take care not to bang up your doors, seats , or glovebox trim when moving it around.
Even in cold weather you’ll want to crack the windows a little to get ventilation, it can get humid in there and cause condensation on the windows and other surfaces. Maybe get a battery operated fan to stir up the air.
If it’s cold enough you probably could turn the fridge off for the night. Most are pretty well insulated. Some fridges vibrate when cycling on, and the noise may interrupt some light sleepers.
