How much more can I expect the front end to drop due to extra weight of bumper and winch? I didn't do a lift because it would interfere with the forward collision calibration. But if it drops the front end, that would be just as bad.

Stock front suspension will drop about 1 inch for every 580lbs of weight. If the winch and bumper combine to weigh 200lbs more than when you started, you should expect about 1/3" of drop. If they weight 100lbs, then 1/6" or so.
The system isn't that sensitive to the angle. It can't be or you could never put a trailer on with 400lbs of tongue weight for example. If you do a cali-lean style "level" kit, you can probably aim it so high that it doesn't work. But in normal use you'll have some variation based just on what you put in it or even how many people are riding in it.
