1) If you want to avoid dealing with tons of wiring, relays, switches, etc. then a Switch Pros or an SPod make things much simpler. There is plenty out there you can read about those systems and how to install them.
Example. I have a Switch Pros that I put in for much the same reason (lights, compressor, etc.) and I am very happy with it. SDHQ also makes a very nice mount for the control in the cab.
2) Lights and winch all are on when your engine is on, so no, no second battery required. 2nd batteries are commonly for things that you run when the car is off - e.g. fridge. (And as battery tech develops - e.g. portable lithium ion / iron - it's now easier to mount batteries anywhere, including just strapping down portable ones when you need it.)
3) I'd plan out your system before you start - it will prevent a lot of re-doing wiring and stuff as you add components.
