Looking for something a bit more durable and waterproof, short of the $200 neoprene covers that take 30 minutes to intall. These must be instant ... I don't want to be messing with a tight fit when I should be fishing.

Years ago when I lived and fished in Oregon, had the same problem. I went to a place in Portland that made boat covers. They made a custom seat cover for me made from water proof material It that had an open elastic back, and bottom. I simply slipped it on from the head rest area, pulled down and forward to the front of the bottom cushion, the elastic did the rest. Took all of 30 seconds or less to install or take off. It was machine wash/dry worked great. You might want to consider something like that.
