To their credit, they did have a "prototype" 4Runner, but the doors were locked so one could only look in the windows.
They did have most of the other 2025 models for display and exploration: Camrys, Corolla Cross, Tacomas, Tundras, Land Cruisers, RAV4. No Crown Signia though.

You talking the Utah Auto Show at the Sandy expo center? Yeah, I go there every year. It's put on by the local dealer's association with varying bits of extra manufacturer support, rather than the major auto shows that are put on exclusively by the automakers themselves.
At least by Sunday, they did have exactly one 6th gen 4Runner at the show. It was white, and it was a prototype, so the doors were locked.
