1995 V6 Reassembly

Hey all. I recently bought a 1995 with a V6. Guy told me about the head gaskets and I got a good deal on it, especially since I'm a mechanic. Everything is going well, but I'm wondering a couple things. There's a vacuum operated temp gauge on the back side by the passenger valve cover, is that critical to operation or can I block it off and get rid of it? There's a giant mess of vacuum lines on the passenger side and I want to know what vacuum lines NEED to be reattached or what ones can be left off and capped. I feel like I am going to spend days tracking these things down and I'm sure most of them are not that important.

Are you sure its the temp gauge. I found my 92 ran best when everything was connected correctly.

I think the temp gauge is pretty important. Why not just reassemble it correctly? It's already a project.
