If you don't have JBL, make sure you get a HU that is compatible with NONJBL, this means the amp is "built in". Not sure about your other questions as the majority of the people who did this mod (me included) had JBL.
OEM value is long gone, but their website is still online. Copy it and/or print it out. It has valuable information on it for the install. As far as NAV units, keep an eye on fleabay, they pop up from time to time.

After researching these and looking on Ebay - it seems they mostly are referenced to as JBL models. Are any of these plug and play with my non-JBL setup?
Also, are the maps regularly updated with them being Toyota OEM?

In your case, I would look for an E7019 that came with late model Corollas and RAV4s. They don't have JBL. Anyway, I did this mod many moons ago and am quite happy with it. I too like the OEM look, but sometimes my NAV doesn't work very well (Occasionally it freezes on me which makes my blood boil.....).
As far as updated maps, Toyota releases new versions every year so you should be good to go if the DVD it came with it, is old.
