Sidewall is either 2- or 3-plies. You’re confusing sidewall with tread layers.

Thanks. Corrected. I saw it stated on a tire website, but not Generals so it is now a 2.

This ad has it listed as 10 ply. Reputable dealer too. Not sure why General doesn't add the information on their website.

I've seen this tire in person (LT285/70R17). The actual, physical plies of the tread are: 2 polyester, 2 steel and 2 polyamide (nylon is an example of polyamide). The actual plies of the sidewall are 2 polyester. I've measured the sidewalls of the ATX (again in LT285/70R17) with an outside caliper and got approximately 8.5mm (previously I mentioned it was a little more than that but I've since remeasured and was consistently getting close to 8.5mm). I've got the same size and load rating in the BFG KO2's (3 ply sidewall) and consistently got 9.5mm. So the ATX is close but not quite the same thickness. The ATX is also about 2-2.5 lbs heavier than the KO2 in LT285/70R17. Hope this helps.

So that's an issue that can happen with any tire, regardless of tread plies?

Yes.
Generally, P-metric tires are not part of offroad discussions and for LT metric it goes like this:
Air down offroad for:
1/ Comfort. Normally 20sh should ok.
2/ Traction. I am sure there is a thread about what psi for what conditions, it also depends on wheels, loads, etc.
3/ Prevent through-the-tread punctures like that.
As for P-metric tires, few of us do a lot of offroading on those and it is different as they are more likely to burst a sidewall when run at lower pressures. They also deflect plenty at 30-33 psi and so there is no need to air down for comfort or traction, except on deep, soft surfaces.

General Grabber ATX tire
Nice looking tire but the design is in line with the Ridge Grappler and a few others I’ve noticed in that the actual tread contact patch is more narrow than the actual tire by design. What I mean by this is the sidewall steps inward a good deal before the tread actually begins. I never paid much attention to this until I got my Grapplers. I don’t like this for two reasons; 1, the aesthetics of this look make the tire look smaller than it actually is and, more importantly, this design lends to less contact width on your driving surface. As measured, my RGs only have a contact patch of 9” when the tire itself is over 11” wide. I don’t care for this because it upsets my pursuit and desires in my off roading tire.
Just be aware of this for those it may matter to. An example of a tire achieving the advertised width would be the KO2 and Falken AT3W by design of the sidewall integrating into the tread.

Okay I have decided to go with these tires in stock size on my stock SR5 wheels.
What I haven't decided is the p or LT version.
P version is $35/tire cheaper, 12 lbs lighter.
90% of my driving is around town and highway, 10% is forest service roads.
I MAY drive the thing from atlanta to colorado this fall and do some back country style camping. that is the only reason I think I need the LT version unless one of you convinces me otherwise. Am i taking too much puncture risk with the P rated tire?
I missed the TRD pro wheel sale or I'd be like everyone else here and upgrading to those wheels too. sad about that.

Yes. You may have to modify the fender liner a bit if you haven't already.
