I think this may come as a surprise to some, but many people favor something slightly skinner depending on the type of off-road. Taller tire is what provides the “fill” you are looking for. Taller does not always need to be wider.
Without going into heavy detail and theory about why, I prefer a 255 from my own experiences off-road. Tires like that can be had plenty tall, and increase of track width can come from either rims or spacers if that was a concern.
Not that I am trying to convince you to do something different, just food for thought & don’t forget about your spare tire.
