Biggest question is should I be doing (and how often) fluid changes on things like the differential, transmission, n things of that nature?
Since I'm the 3rd owner I have zero idea if/when any of that ever got done so i'd love to hear some feedback.

Diffs/transfer case should be done every 15-30K miles. I agree with the above regarding transmission. If it were me personally, I'd take my chances at look at the color of the fluid on the dipstick and see what it looks like. If it's not horrible looking then I'd go ahead and do a drain and fill.
