285/75r16 will give you the most options. The Ridge Grappler is a hybrid at/ht tire, i would not get them for the level of offroading you are doing... I would recommend getting a tire with extremely beefed up sidewalls, 3 tires come to mind. bfg km3, cooper st maxx and stt pro... i personally am...
