I've disconnected my battery multiple times and never lost my Homelink settings so it should be safe to put it on a switched power connection. I may give it a shot next time I'm up in the console

You can just trim the switch panel and get it to fit in there fine but you won't be able to run any wires to the switches without some kind of hole in the back
On mine I cut a slot along the inside top of the cubby so I could run wires through there and yet still have things not fall right out...

The SR5 with the backup camera showed the image in the mirror but I'm not sure if there are mirrors that don't have the screen in them. Antman did a post where he showed how to tap the backup camera from the mirror input to run to a headunit. This might be one easy way to find out if the mirror...
