Brother, you're a better mechanic than I am. I did virtually the same on mine with OME coils with Billsteins. For me it was more like 3 hours to do the rear springs, but I got them did and have been super happy with them.
I've heard really good reviews of the Falken Wildpeaks. I couldn't pass up Kumho A/T's at $500 for 4. I went with virtually the same setup except for OME springs to get my lift.
I have 5100's but also replaced my stock springs with OME's going for very moderate lift. I wound up getting about 2-2.5" of relative lift since the twelve year-old springs were sagging. The ride in my '05 is much nicer than my friend's 2017, IMO, though I have not sat in the back seat of my rig.
I highly recommend replacing the rear springs as well. I just put OME's on my '05 and was amazed to get about 3" of relative lift with my 5100's set to 0. I replaced front springs first but couldn't do the rear until I could get my sway bar end links disconnected. The ride is really nice on...

Picked up a 4th gen with relatively low miles. Up front I put in Bilstein 5100 shock with OME 885's thinking it would level the vehicle by putting the 5100's on the rear and keeping stock springs. Turns out the old springs were sagging quite a bit which threw my measurements off...
