I wouldn't re-gear unless going with 35s (315-325s). If you had a 4cyl 285x75-17 with 3.73 rings i'd say regear. With the 4.0 and 5 speed you'll drop th 3rd or 4th more often and be there a bit longer up the pass but you won't drop speed.

In the summer skip the RTT in Moab it’s going to be hot the last thing you’ll want to sleep on is memory foam down there. I’d get a decent cot instead because you’ll want to be off of the 100 degree ground. That slick rock stays warm for a long time. Or buy some sliders or better skid plate...

There are a ton of forest service roads that you can stay on for days if you choose just be careful sometimes the bridges and roads are completely wiped out by floods. If you're into more serious off roading there are a few ORV parks or you can head down to the Tillamook forest in OR for some...
