FWIW, I had a similar problem and it ended up being the MAF. I replaced that and everything cleared up. Like you, the coil pack and all the injectors checked out. It also isn't consuming any coolant. It's been running fine for months now with the new MAF.

For what it's worth on a 2000 v6 4wd I installed a nearly identical suspension, but used the 2880 instead of the 2881 in front. The side pieces do depend on whether or not you have flares. The ones with flares have extra tabs to attach the flares. From what I remember most of the oem online part sources generally have both styles.
