Sounds like it seems to be firing OK as you've not had any lights/codes come on. I'd keep running some seafoam through there. Chance the thicker oil may have messed with an injector or two. Might not hurt to remove and clean the rails/injectors just to be on the safe side. Depending on how...

How many miles and when is the last time you changed sensors? Sensors are wear items and can deteriorate before the actual fail. I just swapped out all 4 on my 4.7L Tundra when I got one code and the truck runs so much better. Get all 4 Densos and put them in and keep driving.
That is how my 4.7L Tundra works. Only has D 2 and L... sometimes I drop it too far and it ends up in 2nd. Won't shift above that, but then RPMs tell me something is wrong. I don't get but a few yards when I notice so no over revving.

I picked up the same rims, but put them on my older Tundra to upgrade from 16 wheels to 17 inch and get new tires at the same time. Looks great on the 4runner though.
Typical of the ECU not getting enough power... either alternator is not providing enough current of battery is having a hard time. I'm voting on the alternator.
When is the last time you greased your drive shaft and u-joint connections? There are multiple places. I'd start there. Worked for me. And search the forum, multiple threads on this.
