Well I got a response to the same post I put in another forum and they said I was headed towards a blown head gasket based on my symptoms and merely said to 'monitor the coolant and oil' but didn't go into detail.... And I have my FSM and it explains replacing the thermo the way you were saying...

Thanks for all the great responses, guys. I will definitely go ahead with the thermostat replacement but I don't know if it's worth my time to get into that heater core. That sounds like a beast of a job.
