Every vehicle I ever drive I adjust the seat as low as possible. Sometimes I even push the button and attempt to lower it more just to make sure.

If they are so hard to find, I imagine you could find someone to basically buy you out. Maybe the dealership won’t even get a Pro then they will be obligated to refund your deposit. If you are persistent, I’m sure you can get your money back.

The Pro wheels and nerf bars were probably a dealer add on package like “raptor” or something. Seems like a scam.

A short wheelbase makes towing less stable increasing risk and liability for Toyota. That being said, there are so many possible points of mechanical failure that you can’t see as a consumer so who knows what the weakest link is in the chain.
