so even if you have no service on cell phone, but have downloaded the maps, your phone can still track you?

Of note: Wi-Fi only iPads don't have GPS. Wi-Fi + Cellular iPads do have GPS and you don't need to activate the cellular service.

Correct. Your phone GPS works through the GPS receiver in your phone and is not associated with cell service.
So even if you have no service on your phone, but have downloaded the maps, your phone can still track you with a very high level of accuracy. (and GAIA will show you that level of accuracy)

Can Gaia do this. While your off roading. On a trail. Track your route and create the route you went. As in highlight the route you drove ?

What's a good portable GPS?
I clicked on this post to say I have a Garmin but pretty much only use the Gaia app on my iPhone. Looks like everyone beat me to the punch.
I use it for hiking too. I put it on airplane mode to save battery (GPS still works). To save more battery I kill the app when I'm not using it but I leave the phone on. After 4 hours and checking the app every 10 minutes or so, I still have about 90% battery.

Yes, just download the maps for offline use. I have an iPad mounted with Gaia running and the XGPS150A and it works perfectly. Before I go to an area, I map out the different areas and create some waypoints. Then I will download the map around the area and when I get there, I can track everything.

Looks like there's a Gaia bundle on the Apple App Store right now for $19.99. Includes both Gaia and an app called OTM (Offline Topographical Maps).

I'm a little late to the party and it seems a lot of the confusion about phone GPS has been cleared up. A little tip about extending battery life for Android users though. Put your plane in airplane mode. Then turn on GPS to device only. That'll keep the radio off and save you tons of juice. I'm sure the iPhone has a similar feature.
My go to app is Backcountry Navigation Pro and has been for a few years. I still carry a paper map as a backup but never end up pulling it out. Here's a few screenies from the app. This was a climb up Mt Humhprey's I did last year.

I'll second Backcountry Navigator. I use it on my phone when backpacking and use it in my car as well.
In my 4runner I use a Ram mounted Galaxy 7" Tab.
Cool part is that the Galaxy Tab A does have stand alone GPS. Backcountry has several map choices including forest service topo maps that I really like. Cool part about using this setup is that I also use AutoGuard which is a dashcam program that runs in the background. Also in camp you just drop it out of the mount and you have a full fuction tablet for reading, music, photos etc.

You want a dedicated GPS. I don't trust my phones very broad GPS chip, sketchy hardware, software and poor battery life. I have a Garmin rino 655t and a 60CSX. They are both awesome units, the rino has the ability to communicate with other rinos and they will work when you need them to. I use my rino snowmobiling in wyoming, it's outside for up to 10 hrs in the cold and my battery never drops below 60%. Should last for days in the summer.

I'll throw in another vote for a standalone GPS. I like the idea of the GPS phone apps but my issue is battery life. I have an older model Garmin Etrex that I've used for years and it has worked great. Runs off of AA batteries which makes it easy and relatively inexpensive to carry spares in my pocket or backpack if I'm out hiking.
