Vacuum sealed bags of previously cooked goodies - meats, beans, potatoes, veggies, etc..., mix 'n match, just plop those vacuum sealed bags in some water, boil it up, and serve. The heated water makes coffee or tea and you'll have virtually no cleanup.

In a pinch, they're already cooked so just eat right out of the bag.

I go backpacking more often than Overlanding/car camping, so I really take advantage of being able to bring a cooler. Steak and green beans, loaded baked potatoes, burgers, tacos.

Toasted peanut butter tortilla for dessert (a backpacking favorite)

eggs with maple sausage and sauteed onions in the morning is my absolute favorite. all in one pot, too. Having a hot meal in the morning just makes the rest of the day so much better.

Pre-prep all the main meals ahead of time into single bag per meal that way they just need to be opened put onto right onto cooking surface. Like as an example; sliced beef, onions, peppers with the spices mixed in all in one heavy duty zip and tortillas wrapped in foil thats a dinner of fajitas for a night. Snacks are usually high cal and protein and are packed separately. We also do salami and cheese.

Dehydrated meals while great for backpacking are not fun when car camping and trail blazing in the truck when weight is not a concern, so we will have 4 or 5 thousand cal worth of different meals stashed with us but reserved for back up in case something happens to our main food stores or if someone in the group has emergency and needs extra food. They are good for some easy and fast calories just add water. The breakfasts are actually pretty good any time, the dehydrated blueberry granola breakfast. I think thats mountain house at least.

for offroading i usually just buy a sandwhich at a gas station right before we start. often the group that i go with will bring like burgers or hot dogs but some places dont like us grilling.

really depends on the length of my trip. If it's just a day trip, then I'll probably bring a bunch of unhealthy bagged snacks like Chips, MAYBE a sandwich, and other random munchies. Or if someone or myself brings a camp grill, just pack some hot dogs and buns.

For weekend or longer trips tho, I'll bring my portable grill, portable pellet smoker and small generator. Cook up tri tip, ribs, chicken, salmon, and the list goes on. breakfast is usually the basics (pancake/sausage/bacon/hash browns) then lunch is burgers or hotdogs, but dinner is where we get really cookin!!! lol

Back in the day, I used to do week long 4x4, ghost town and exploration trips with a couple friends, all of us driving and camping in our own rigs. I always kept it simple.

Little fresh, mostly eggs, sausage, bacon, potato patties.

Canned meats, soups, pasta.

Dried items that required hot water.

A jug of Carlo Rossi Paisano table wine.

Trail mix.

An occasional stop at a roadside cafe for lunch or dinner.
