What's nice about hominy in chili is that it's very much the consistency of a bean, and not a ton of flavor but provides good substance.
There are no bell peppers in the chili, it's a variety of hungarian, anaheim, etc.

SPICY THAI BEEF SALAD
Salad:
1 1/2 pounds sirlion or flank steak
1/2 tsp salt
1/2 Tbsp freshly ground pepper
6 cups red leaf (or any other type) lettuce, torn into pieces
1 large cucumber, peeled and sliced
1 tomato, cut into pieces
1 small onion sliced into bite size pieces
1/3 cup (10g) fresh mint leaves, chopped (optional)
Dressing:
1/3 cup fresh lime juice
1/4 cup fresh cilantro leaves, chopped
1 1/2 Tbsp brown sugar
1 Tbsp soy sauce, low sodium
1 Tbsp water
1 Tbsp fish sauce, bottled
4 cloves garlic, minced
1 serrano pepper, red Thai pepper, or jalapeno pepper seeded and minced
Directions
Preheat grill or broiler.
Prepare dressing: Combine all dressing ingredients in a jar or bowl; mix well. Set aside.
Salt and pepper both sides of steak. Place steak on a grill rack or broiler pan coated with vegetable oil spray. Cook to desired doneness – medium rare or rare is best. Let stand 5 minutes. Cut steak diagonally across the grain into thin slices. Cut each slice into 2-inch pieces. Save the juices and pour over salad, too.
Prepare salad mixture, pile on plater. Top with sliced steak, pour dressing over all.
Serve with rice – basmati rice is excellent!
