Stab a bunch of deep holes under the skin and the meat and fill those up with a mixture of oregano, ground black pepper, salt, chopped garlic and red wine vinegar and let it marinate overnight.

We will roast this for tomorrow's Sunday dinner.

Pernil today and then later I will cut up some into pieces and lightly fry it with a little oil, red pepper flakes and cumin for taco and burritos.
