BBQ Ribs

Now for another off-topic:
A mans got to eat. I have a hard time finding really good ribs in the Great White North but have always been successful finding them in my travels across the States (you guys must raise better porkers). A local charity does a rib-fest every summer and the boys that come from the south always beat out the locals on taste.
Is anyone willing to share some good Rib recipes? Or point us to good proven recipes on the Web?

Not just pork ribs, beef ribs, too!

And if you want to start a debate, just declare which is your favorite. In the South, BBQ is a bit of a religion.... wet or dry, beef or pork, vinegar or sweet, KC-style or Memphis or Texas or ....

It's best to try them all, make up your mind, then re-test to see if you were right.

(point to your left shoulder)
the brisket...

(point to your right shoulder)
and the sausage....

there...you've now learned the most basic BBQ-prayer in my texan household...

of course, it's lightning outside, maybe I should stop now before that lightning strikes me... :D

I need recipes

No debate here. I'm not into beef ribs because I would rather throw a thick tender slab of cow from my favourite butcher on the grill. Problem is with pork. I caught the BBQ bug years ago on a trip to Kentucky. Been to many other states since but the few recipes I've seen don't seem to cut it. It might be the meat up here because even the best I can get doesn't seem to be good enough. They aren't fall off the bone like home-made. The best I've been able to do at home is a recipe called Calgary Stampede Ribs (a wet sweet sauce).
I'll try the FoodTV link above.
Anyone willing to give up some family secrets or actual recipes?
I'm working up an appetite just talking about it!
