Currently in the summer heat, I consistently run between 190-194 unless I'm climbing a steep grade and then it can go higher into the upper 190's.

The fact that the AC function doesn't improve at highway speeds leads me to believe the fan clutch isn't the problem. If the fan clutch was the culprit, you'd see poor AC performance while stopped and improved AC performance once you get rolling and air is moving through the condenser.

I only have experience with Android phones so I couldn't help you there. But, another member @JoeBand , has been searching for a good app for an I-phone and maybe he'll have a recommendation for you.
