Yes, you are less likely to hit the bump stops because of the lift. The problem that comes up is if your shock bottoms out (compresses too much) before the suspension hits the bump stop. It can destroy the shock. An appropriate sized extended bump stop will prevent that.
I’m not sure of the limits of the Bilsteins.
You can also use bump stops to prevent rubbing or over stuffing of the rear wheels up into the fender.

There should be no difference unless something was way off. Like if the suspension was sitting on, or very close to the bump stops. More likely in a lowered vehicle.
