OME springs will add a couple inches (unless they have some stock height stuff they don't advertise with the lifts). Their spring rates are designed for better ride, so they should flex fairly well, and they pre-stress all their springs to eliminate sagging down the road. A couple inches shouldn't compromise your handling too drastically--the extra width of larger tires should offset most of that.
