Happy to share that I got everything setup and working properly. Fog light issue was something simple... The polarity on the adapter harness was flipped and backwards. Flipped them around 180 degrees and re clicked them in and bam then work! My dumb luck is I hooked both of them up wrong...

I suppose a logical thing would be to check the all the connection harnesses to the fog lights and make sure they are connected correctly. If no success then swap back to factory to see if I can get those running again.
