Run the recommended oil weights only!
The first number is the winter viscosity.
The W stands for winter
The second number it the hot viscosity.
Newer year engines have tighter tolerances than the older model engines.
Going to a thinner winter viscosity may not be a big deal. Going thicker can destroy and engine (spec'd oil: 5w30 and running a 20w50, not good)
Thicker does not protect better.

ive been running the M1 0w-30 since the first oil change with no issues. walmart doesnt seem to have 5w-30 and M1 advertises that the 0w-30 offers the same/better protection as the 5w-30.

I get Mobil1 in 5W-30 there all the time. I imagine they out of stock at the time you checked.
Is 5W30 not working for you? If it is, I don't suggest trying to be creative or thinking out of the box when it's totally unnecessary.

really? ive never seen it at the one by my house. i look all the time for the 5w but they only seem to carry 0w?

I just tried Mobil1 0w 30 for the first time. After 5000 miles on my V6, I performed the oil change and found no oil, zip, none, nada in the mobil1 M1 209 filter. Don’t know if it was a bad filter or not. And the filter wasn't empty because the car had set over night. The filter looked as it had when it first came out of the box when I put it on 5000 miles earlier. Never had any oil pressure issues during this time
Not sure if it’s oil issue or filter issue. Regardless, I went back to Mobil 1 5W-30 and Toyota YZZD3 filter. When I unscrewed the new filter after running for a while, Oil started draining from the new filter, so everything seems fine now. I’ve used the M1 209 filters on all three of my Toyotas and haven’t had any experience like this. I’m wondering if maybe the 0W 30 oil is a “no – no” for the 1GFRE engine.

Been using Mobil 1's 0W30 synthetic (except for those two times when I had to use dino because I mistakenly thought I had some on hand) for about 90,000 miles at 5,000 intervals.
No problems. It goes in nice and smooth, smelling sweet and comes out all black and smelly.
Why 0W? Tahoe temperatures can drop to the 20's and the 0W helps flow on initial startup. Yeah there's a larger range (30 basically) than a 5W-30, but a 5000 interval should help deal with premature oil breakdown.

Pour point on M1 0w30 is -51C on M1 5w30 is -45C So since the HTHS on 5w30 is a bit higher I would stick with the 5w30 unless you live on the North Pole with Santa

I think the question of this topic is, would there be a problem using 0w vs the 5w. and the answer is...no.
you’re very correct though with 5w would work and there is no need for the 0w unless you’re living in a climate like the north pole but the OP would have no issues if he/she used the 0w instead of 5w.
I for one use the 0w just due to the fact the walmart by me does not seem to carry the 5w. I change regularly on 5k and on occasion in the mountain towns here in CO it can get well below zero Fahrenheit.
