If the issue is just having a weapon and gear in the vehicle in case you need it and not rapid deployment. Why not make a case that looks like a spare fuel tank and modify the existing spare tire carrier to be a quick release?
Basically have a disguised suitcase with your "SHTF" loadout ready to go, most people aren't looking under the vehicle and if you built the case right it'd look like an auxiliary fuel tank. You could then fit the rifle, mags, extra ammo, and any other needed equipment easily and discretely? I mean it fits up to a 32" tire down there...

Not an AR, but good enough for me.
I keep either a Shield with extra mag or G29 in the upper console lid. Thought about making a kydex velcro cap to conceal it, but 90% of the time it goes on my hip when I get out. If you’re handy with kydex you can send me the prototype! Long guns are in the cargo and will now be hidden even without the cargo cover. Could get at least 6 long guns under the storage shelf if needed.

My buddy used this: RAPiD(R) Safe AR Gunlocker - Hornady Manufacturing, Inc
Fits perfectly between the wheel wells in the back, come with a "Fairly" strong cable to padlock to the seat frame; he added a heavy duty chain in addition to the cable and padlocked them both to the seat frame. So a simple smash and grab would be impossible between the weight of the safe, cutting the chain, cutting the cable and then trying to muscle it out the back window. He took the foam pads out for added room and it fits his AR, body armor, optional chest rig and complete gun belt setup. Overall I'm kicking myself for not getting one because the price has gone up. I think he paid under $200 last year.
He also has dark window tint on the back windows so people cant see inside the back cargo area.

In my opinion, the best choice would be to make a homemade holder. For example, I made two gun holders in my car, one directly on the driver's door and the other on the passenger side. Also, I have a couple of hunting rifles at home, but you can not make an amount here at home, for there are children. Well, that helped gun safe with a code lock. If anyone is interested, see this website that describes everything in detail.

I’m new to the forum, but have some experience with this. Please be careful with rifles in your vehicle. Hand guns will be easier to utilize. Only way I would carry a rifle would be in a safe in the back (referring to an everyday mounted option) As a civilian, I can’t imagine the need for an AR Mounted in a vehicle. Ever. Glass is not exactly hard to break.
I carry a gun for work as well as off duty. The situations I would actually pull it out of the holster are slim to none. Even as a LEO, actually pulling out an AR is extremely uncommon, even for us. As we deal with A-holes with weapons daily.

I lurked mostly here, but tend to agree that a safe in the back is better than carrying open when it comes to long guns. I have one that is permanently mounted. Road trips is when it gets used the most. As far as ARs (.223/5.56) go, it's not the same caliber as my EDC so the only time any ARs are in the back is if I'm going to the range.
I think I would have went a different way. (Picture of shotgun mounted on interior roof.) Maybe lower on wheel well so did not need to reach up to grab it? Also in event of wreck I would not like it coming loose. To each their own though.
